La catégorie Entrée marque le début de notre gamme cérémoniale : il s’agit généralement de feuilles de première ou deuxième récolte, cultivées à l’ombre avant la cueillette, issues de jeunes feuilles soigneusement sélectionnées. Frais et végétal, il est plus astringent et amer que les catégories supérieures ; vif et tonique comme l’usucha, il est suffisamment corsé pour être consommé avec du lait.

Le Matcha Shizuoka Kakitsubata est classé en catégorie d'entrée de gamme en raison de ses caractéristiques gustatives. Issu du cultivar Yabukita , réputé pour ses arômes puissants de légumes cuits à la vapeur et ses notes salées, il s'ouvre sur une texture douce et légèrement crémeuse, évolue vers de riches notes salées équilibrées par une douce touche d'agrumes, et se termine sur une finale légèrement sèche.

Le Matcha Shizuoka Kakitsubata est élaboré à partir du cultivar Yabukita , la variété de thé la plus populaire au Japon. Ce cultivar est réputé pour sa saveur intense et sa facilité de culture.

Le cultivar Yabukita est idéal pour matcha grâce à sa saveur intense de légumes cuits à la vapeur. Il apporte également une belle saveur salée, faisant de ce matcha un véritable délice pour les amateurs matcha

Mélangé en une fine couche comme l'usucha, 2 g de matcha permettent de préparer un bol.

  1. Trempez le fouet en bambou — 2 à 3 minutes avant la première utilisation, 30 à 60 secondes pour une utilisation quotidienne.
  2. Tamisez 2 g (1 cuillère à café) de matcha , soit environ 2 cuillères chashaku , dans votre bol.
  3. Chauffer l'eau à 70°C / 160°F.
  4. Ajoutez 10 ml (1 cuillère à soupe) d'eau et travaillez jusqu'à obtenir une pâte lisse sans grumeaux.
  5. Ajoutez le reste de l'eau — 80 ml / ⅓ de tasse au total.
  6. Fouettez en effectuant des mouvements rapides W pendant 15 à 30 secondes.
  7. Savourez votre matcha , puis rincez le fouet, laissez-le sécher à l'air libre et rangez-le sur son support.

En format latte :

  1. Tamisez 2 g (1 cuillère à café) de matcha , soit environ 2 cuillères chashaku , dans votre bol.
  2. Chauffer l'eau à 70°C / 160°F.
  3. Ajoutez 10 ml (1 cuillère à soupe) d'eau et travaillez jusqu'à obtenir une pâte lisse sans grumeaux.
  4. Ajoutez encore 30 ml d'eau — 40 ml au total — et fouettez en effectuant des mouvements rapides W pendant 15 à 30 secondes.
  5. Versez le matcha sur votre lait chaud ou froid préféré. Ajoutez des glaçons pour obtenir un latte au matcha glacé.

La famille Osada cultive le thé à Shizuoka depuis plusieurs générations. Forts de leur succès dans ce secteur, ils ont transformé leur petite exploitation familiale en une entreprise de taille moyenne, employant de nombreuses personnes des environs. 

Bien qu'ils produisent un plus grand volume de thé, ils parviennent à maintenir des normes de qualité élevées. Ils y parviennent en travaillant avec de petits producteurs en montagne, auxquels ils accordent l'attention aux détails propre aux petites structures. Ils ont déplacé leur site de production en montagne pour se rapprocher des lieux de production, ce qui a permis d'améliorer la qualité. 

Le Matcha Shizuoka Kakitsubata est cultivé dans le village biologique d' Isagawa . Ce surnom désigne un quartier de producteurs de thé qui se sont engagés à cultiver le thé sans pesticides ni produits chimiques. 

Pour la culture du thé, il ne suffit pas de veiller à ce que ses propres plantations soient exemptes de pesticides ; il est tout aussi important de s’assurer qu’aucun produit chimique n’est utilisé sur les terres environnantes. C’est pourquoi il est si important que les agriculteurs d’ Isagawa collaborent et garantissent une agriculture 100 % biologique.

Comment faire Matcha comme un pro

Discover the art of preparing the perfect bowl of matcha, from choosing the right tools to mastering the traditional whisking technique.

Prepare

Soak the bamboo whisk. First use: 2–3 minutes · Daily use: 30–60 seconds. Sift 2 g (1 tsp) of matcha, or 2 chashaku scoops, into the bowl.

Make the Paste

Heat water to 70°C / 160°F. Add 10 ml (1 tbsp) of water and combine into a smooth matcha paste with no clumps.

Whisk

Add the rest of the water, 80 ml / ⅓ cup in total. Whisk in quick W motions for 15–30 seconds.

Enjoy & Care

Enjoy your matcha. Rinse, air-dry and store the whisk on its holder.

We ship from warehouses in the US, the EU and Japan — whichever is closest to you. US and EU orders arrive in 4–12 business days; the handful of countries served from Japan take around 10. Business days count from dispatch rather than from when you order, and exclude weekends and public holidays. You'll get a tracking number by email the moment your parcel leaves the warehouse.

We only buy from fields grown without pesticides or chemicals. We ask each farmer directly how they manage their land, visit the plantation and processing facility ourselves, taste every harvest before committing, and check that the biodiversity around the fields is alive. Small family farms don't always carry paperwork — so we verify it in person instead.

Japanese green tea covers an enormous range, and choosing online isn't easy. If you've tried yours and it isn't for you, email info@nioteas.com within 30 days with your order number and a line on what you didn't enjoy. We'll send a different tea of equal or lower value, free. Nothing to post back — keep it, share it, or try brewing it cooler. Once per order.

Email info@nioteas.com within 30 days with your order number and a photo. We'll approve it, cover the return postage with a prepaid label or a reimbursement, and refund you — no restocking fee. Refunds go to your original payment method within 2 business days of the return reaching us; your bank may take another 5–20 to show it.

Unopened items in their original packaging can be returned within 30 days. Tea is sealed for hygiene, so opened packs can't come back — but the swap above covers exactly that situation. Return postage is yours unless the item arrived damaged, defective or incorrect.

Orders to the US and EU ship domestically from our local warehouse, so there's no customs charge and no duty. A small number of destinations are served from our Japan warehouse, where your own customs authority may apply import duty, VAT or a carrier handling fee on delivery. Those are set by your country, not by us. Ask before you order and we'll help you check.

the aroma is grassy and fresh. once whisked, it becomes more creamy and sweet, almost like sweet corn. i used almond milk for this one, which is actually my first time using almond milk with matcha, and i really liked how it turned out. it made the matcha really creamy and smooth, with a mild umami and a slightly grassy and vegetal aftertaste. no astringency at all. i first tried it with just the matcha and almond milk, and i already liked how it tasted. then i added 5g of agave, and i think it made the flavors more balanced and brought out the sweetness even more.

This matcha mixes well, not too strong. It's slightly bitter. Sweetness hits the back of the throat at about 30 seconds after a sip. The tea's body starts to open up. It's mild and creamy, but I'm still running into my usual problem - it's hard to detect the notes that surround the main body of a matcha unless I drink several of them back to back as a flight. It yields a nice aftertaste which continues to linger several minutes later. I wish I had made it about 5 degrees warmer.
