Ingredients

  • 2 Teaspoons Latte Matcha Powder

  • 1 cup glutinous rice flour

  • 1/4 cup granulated sugar

  • 2/3 cup water

  • Potato starch (for dusting)

  • 1-2 teaspoons matcha green tea powder

Directions

  1. In a microwave-safe bowl, combine glutinous rice flour, sugar, and 1-2 teaspoons of matcha green tea powder.

  2. Mix in the water until you have a smooth, uniform mixture.

  3. Cover the bowl with plastic wrap, leaving a small vent for steam to escape. Microwave the mixture on high for 1-2 minutes, or until it becomes translucent and gooey.

  4. Stir the matcha mochi mixture until smooth and turn it out onto a surface dusted with potato starch to prevent sticking.

  5. Knead the matcha mochi until it becomes soft, smooth, and pliable, generously dusting your hands and the surface with potato starch to prevent sticking.

  6. Roll the matcha mochi into a long rope, about 1 inch in diameter.

  7. Cut the matcha mochi rope into small pieces, approximately 1-1.5 inches in length. Dust the pieces with potato starch to prevent sticking.

  1. Take one matcha mochi piece and flatten it in your hand.

  2. Place a small amount (about 1 teaspoon) of sweetened red bean paste or green tea filling for mochi, mixed with 1-2 teaspoons of matcha green tea powder.

  3. Carefully fold the matcha mochi over the Green tea filling for mochi, sealing it well to form a small, filled matcha mochi ball.
